Flip your steak once, then make one quarter turn for each side. This creates appetizing cross-hatch grill marks. ---Avoid barbecue sauces.  Steaks must be appreciated for its own flavour and juices.  Simply season with salt and pepper. Zest with a dab of olive oil. ---For that extra appeal, condiments of salt, pepper, red wine and unsalted butter are prepared two weeks in advance and pat sparingly on each face of the steak just before lifting from the grill.
